Coconut oat cookies- vegan


This recipe makes quite a lot... 40-45, in fact! But don't worry; they are sure to vanish in no time... If you make sure you don't cook them too long they cool to a crumbly, crunchy texture on the outside, yet softer and chewy in the centre.
500g unhydrogenated vegan margarine (I used " Pure", soya variety)
250g demerara sugar
500g organic wholemeal flour
250g organic jumbo oats
200g desiccated coconut
  • Cream the sugar and margarine together
  • Mix/ rub in the rest of the ingredients until thoroughly combined
  • Roll into balls (about the size of a ping-pong ball), place on an oiled baking sheet and flatten into roughly circular shapes with a spatula. Make sure you leave a little space between each cookie as they spread a little when cooking.
  • Bake in an oven preheated to 200C for 10-15 minutes, until they are just beginning to brown. Do not be tempted to overcook them, as they will crisp up if you remove them from the tray and put them on a cooling rack.
